This is more of a kitchen sink kind of roast that was just thrown together to see how it came out, and it came out great! I like to brown butter with thyme before adding the seasoned chuck roast into the pan to sear. Once all sides of the roast have been seared you can add in all your chopped vegetables, and potatoes, garlic, jalapenos, and mixed seasonings.
Chuck Roast Recipe
Ingredients
- 3.5 lbs Chuck Roast
- 3 tbsp Butter Salted
- 1 Bell Pepper Green
- 1/2 Yellow Onion
- 2 Carrots 2-3" in half
- 2 Jalapenos Diced
- 8 cloves Garlic Diced
- 4 Potatoes Yukon Gold
- 4 cups Beef Broth
- 1 tbsp Oregano
- 2 tsp Thyme
- 1 tsp Cumin
- 1 tsp Paprika
- Salt and Pepper Coarse
Instructions
- Coat your chuck roast with coarse salt and pepper while your dutch oven heats on the stove, add butter to melt. Sear the chuck roast on all sides.
- Chop up your vegetables while the roast sears, rotating for each side. Pull out and measure your seasonings into a small bowl.
- Once seared and oven is preheated to 375* add everything to the dutch oven, and put in oven for 4 hours. Checking after 2 for potato, and carrot and meat tenderness. Check again at 3 hours and adjust time for desired tenderness.
